Welcome to A Pocketful of Lentils! I am a 20 (almost 30) something who loves international travel, cooking, crafting, and hiking. I started this blog as a way to encourage myself to cook more and specifically, cook more from the cookbooks I own and from those I take out from the library.
I currently live in Denver, Colorado, but I am originally from Central New Jersey. While I sometimes miss being able to get a cup of matzo ball soup late at night from a local diner, you can't beat living near the mountains.
My favorite ingredients include: lentils (of course), eggplant, cumin, gruyere, brussel sprouts, onions, and peanut butter.
One day I hope to own a red Le Creuset dutch oven.
